Carbon Footprints

Having set this blog up a couple of years ago and managed just a couple of posts; things have changed for me in the last couple of years. I remain a huge food fan. However some of my principles have moved on with a focus on no food waste, reducing plastic and eating a more balanced diet. By balanced, I’m not just talking about balance from a health point of view; but with the ambition of reducing our carbon footprint.

We’re very much an omnivorous household, but we have focused on adding in more vegetarian and vegan options at home whilst still maintaining our no waste principles.

Some friends recently suggested that I should blog about some of the things we’ve tried, and it reminded me that I set this up two years ago and have done very little since!

So whilst I’m home alone and I’m sat tucking into my vegan ‘frittata’ purchased at Leith Market, Edinburgh at the weekend from the wonderful Planet Kuku. Keeping with the vegan theme I’ve made a carrot, fennel and pearl barley warm salad to go alongside. I’m feeling very inspired by the whole market, and in particular some of the ideas and creativity of vegan stallholders. So whilst I remain steadfastly omnivorous. I’m enjoying exploring new recipe ideas which are firmly plant based.
